Sea Salt & Coconut Oil Dark Chocolate Peanut Butter Cups

 Is there anything better than peanut butter and chocolate?

I mean, seriously, it is so good!  Last week I whipped up some of my favorite sweet treats; sea salt & coconut oil dark chocolate bars.  Not only do they take the edge off my sweet tooth, but I feel a little less guilty eating them because come on, they are healthier, right?

Yesterday being Memorial Day, we were invited to some friends of ours' BBQ.  In Wyoming, if the weather is nice, you know a good old fashioned BBQ always ends with a fire pit being lit in the backyard.  And what good is a fire pit without s'mores?

Since the s'mores were my contribution to the party, I, of course, got the traditional ingredients. According to my husband, a s'more absolutely, positively has to be Honey Maid Graham Crackers, Hershey's Original Chocolate, and last but certainly not least....Jet-Puffed Marshmallows.

While I agree to this concoction, I like to add a little healthy variety to my desserts.  So naturally, I made my own chocolate bars.  However, while in the kitchen getting these babies prepared, my jar of peanut butter caught my eye.  Needless to say, I ended up making a few of these delicious treats, and I do not regret it one single bit.

Now, I like my chocolate DARK.  I am not talking this 65-75% dark.  I mean 90% and above.  Dark as night.  Tall, dark and handsome.  Any way you put it, the richer the better.  But, as my friends so lovingly pointed out, dark chocolate is not for everyone.

I definitely have developed a taste for the bitterness of dark chocolate, and find it helps not only curb my sweet tooth, but also restricts how much I shovel in.  A benefit for both my heart and my waste line.  But, if you do not fall within this same category the recipe can easily swap out the dark cocoa for regular.  Everything else should remain the same.  Just, please, keep the sea salt.  It always make chocolate better.
