Vanilla Chia Overnight Oats
If you are anything like me, the idea of sitting down and eating a full breakfast makes you cringe. Yes, I know, breakfast is the most important meal of the day. But for some reason, my stomach can only handle a cup of coffee before 9 a.m.
Fortunately, I LOVE having a meal replacement shake every morning, so, at the very least, I am not missing out on any key nutrients. I am a diehard Advocare fan, because, I swear, their chocolate meal replacement shakes taste exactly like a Wendy's Frosty. No joke.
But when the budget doesn't allow for the higher end shakes, I am perfectly content whipping up a Slimfast or Kroger meal replacement drink.
I have made overnight oats before and they taste fantastic. Since I am not a breakfast eater, having something chilled for breakfast is a bit easier on my stomach. However, typically they are made in mason jars and I never end up finishing a full batch in time.
Luckily, my pesto jar was the perfect size to try this out again. I popped in into the dishwasher for a quick rinse to make sure there would be no pesto aftertaste and got to work.
I happened to have some chia seeds in my pantry and felt they would be a great addition to this dish. Not only am I one of those weird people who love the slimy, gooey texture of puffed up chia seeds, but they host a plethora of different health benefits. By adding one tbs of these babies I was able to increase my protein content, added some healthy antioxidants and some much needed fiber to keep me fuller longer.
Note: Because I didn't follow any recipe, please keep in mind these measurements are an estimation. Feel free to be a little more lax or strict depending on your own taste preferences.
- 1/3 cup unsweetened vanilla almond milk
- 1/2 cup old fashioned oats
- 1 tbs chia seeds
- 1/2 packet Carnation Breakfast Essentials, Classic French Vanilla Powder
- 1 6 oz. jar
- 1 tsp cinnamon
- 1 tsp nutmeg
