Peanut Butter Banana Breakfast Naan


Happy humpday friends!  Can you believe it is already Wednesday?  This week is just flying past.

It is a cold and rainy day here in Wyoming, which is all right by me.  As I have said before, I am most productive in this type of weather.  In fact, it is just shy of noon here and I have already worked out, fed my child both breakfast and lunch, put him down for a nap, and finished all my chores.  I am not saying this to sound super-mommy because I am so far from it, but it just goes to show how my body and soul are so rejuvenated with the changing temps.  Trust me, by January I will be cursing the cold along with everyone else.

Anyway, with the chill in the air came my desire for all things cozy.  I started a fire, put on my imitation (AKA cheap) Uggs, and I am now tucked cozily away in my office sipping on a delicious mug of hot tea.  I have found one of my new favorite flavors so be on the lookout for it in this week's Things I'm Loving FriYay.

I was craving something warm for lunch today and I am all spent on leftovers from two days ago, as delicious as they may have been (see my Instagram for details on that amazing meal).  Moreso, I really was craving some sort of breakfast item, especially since I have a mountain of bananas that are two days shy of only being useful in banana bread.  Because I always do protein shakes for breakfast, having breakfast for lunch or dinner is not uncommon around my house.  Because I mean--c'mon!--it's breakfast food!

So I got a little crazy in the kitchen using up whatever I had on hand.  Last week when I made my Spicy Naan (find the recipe here) it was incredibly popular with y'all, so I decided to do another naan recipe, only this time for breakfast.  So, here you have it--Breakfast Naan.  It is without a doubt my new favorite easy and healthy breakfast recipe.  I may even sub it in for one of my shakes a few times a week.  No joke.
