Philly Cheesesteak Stuffed Peppers

Well, it is official....we had the first snow of the season today.  While it melted the moment it hit the ground and has been pretty much a really cold rainy day, it was nice to experience that sweet moment as those first white flakes started to fall.

Surprisingly enough, I have managed to stick to only one cup of coffee today, despite the cold.  However, it definitely left me with a desire for something warm in my tummy to help make it through the evening.  That and a roaring fire, which my son has definitely taken over my usual perch as his official "tushie warmer."  I'd tell that kid to take a hike if he wasn't so darn cute.

Fortunately, I already had a hearty and healthy meal on this week's menu--Philly Cheesesteak Stuffed Peppers!

Philly Cheesesteak sandwiches are one of my favorite comfort foods.  Something about the gooey cheese and meat on a toasted hoagie just makes me so happy.  Of course, as soon as I think about how many calories the average Philly has I start to get a little discouraged, especially if it is not a "treat myself" kind of meal.

While I usually swap out the sirloin for grilled chicken when trying to cut the fat in my cheesesteaks, I am not blind to the fact that my hubby prefers the steak version.  Being the nice wifey that I am, I sometimes oblige.  That said, for tonight I used some delicious sirloin but cut the heavy carbs and added in a delicious helping of quinoa for added protein.
