Roasted Red Pepper Quinoa Caprese


So I have to apologize first of all for being a bit out of the game yesterday. The stomach flu has hit my family hard this week and yesterday was my turn to take it's nasty punches...so needless to say I did not do my usual Things I'm Loving FriYay.

But today is a new day and I am on the upswing. It was nice to finally want to eat again, but of course I wanted something warm and satisfying in my tummy. And, of course, healthy.

So I decided to whip up one of my all time favorite meals: Quinoa Caprese.

I am a quinoa fan to the core and could eat it for breakfast, lunch, and dinner. My husband...not so much. So when I make quinoa meals they are usually for one. Or in my case, for one times three days of leftovers.

I have come across many amazing recipes out there for this dish. After I have been making it for a while I tend to just try out a mix of all the recipes until I find what works for me. Or what I have in my pantry.

But, you know I love, love, love spicy food and I wanted to incorporate that into my quinoa dish. Hence, the addition of roasted red pepper.

Feel free to add or subtract anything you want. I have also enjoyed this recipe with cherry tomatoes and fresh basil. And be sure to add as many or as few red pepper flakes as you want. The more you add the spicier it gets.
