Gnocchi & Bacon Mac n' Cheese

A couple of weeks ago my husband--in his not so subtle hinting way--sent me a recipe on Pinterest for Macaroni and Cheese using Gnocchi instead of noodles. After reminding and re-reminding me of it, I gave in an decided I would give it a try.

The original recipe is from Gimme Some Oven looked absolutely amazing, of course, I had very few of the ingredients, so I decided to make my own take on the dish.

Unlike most of my other recipes, this one is not healthy. To put it simply, it is the mother of all cheat meals.

That is freaking FANTASTIC!

Like, so fantastic, that I worked out twice and ate only proteins shakes and salad all day leading up to dinner in order to indulge in this comfort food. And it was so worth it.

I made mine with real bacon, feel free to sub for turkey or leave out altogether. Though, if we are being honest, if you are going to use this as a cheat meal, why not do it right?

The gnocchi is the perfect substitute for noodles as it really soaks up the cheese sauce. And, of course, who doesn't love bacon on their mac?

  • 2 1 lb packages pre-made gnocchi (or make your own)
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 cup chicken stock/water with one chicken bouillon cube 
  • 1 cup milk 
  • 1 tbs butter
  • 1 tbs minced garlic
  • 1 package of bacon
  • salt/pepper to taste
  1. Cook bacon, cool, and crumble. I used my Nutribullet to chop the bacon down to a super fine consistency,
  2. Boil water and cook gnocchi according to package instructions.
  3. While gnocchi is cooking, melt butter over medium-high heat and add garlic. Let saute for a few minutes.
  4. Wisk chicken stock or water with garlic base and bring to a boil.
  5. Add in milk and combine until smooth.
  6. Slowly fold in both types of cheese.
  7. Season cheese sauce with salt and pepper.
  8. Strain gnocchi and fold into cheese sauce.
  9. Top with crumbled bacon.
